01 / Why instant tastes like instant

Instant isn’t a quality problem. It’s a where problem.

Great coffee is grown at origin and then shipped as raw green beans — water, weight, and all — halfway around the world before anyone makes a cup. The soluble-coffee giants fixed the shipping math by extracting hard and cheap, boiling the life out of the bean to squeeze more from less.

We did the opposite. We moved the hard part — roasting and extraction — to the farm, and we kept the yield low on purpose. Less coffee per bean. A far better cup.

    Single lots, roasted at origin within days of milling.

    Hot-water extraction held at specialty strength. The flavor happens here, on our terms.

    Dry

    Freeze-dried into crystal. Cold, slow, aroma kept in.

    Ship

    Finished crystal, densified. One container carries the output of five of green.
